The yellow gentian, the raw material for our truffle praline, is sustainably harvested in the Austrian
Alps and the French Massif Central. With its highest naturally occurring bitter component,
amarogentin, it provides moments into the secret of nature's bitter sweetness when enjoyed in a
symbiosis of the finest chocolate and gentian noble brandy.
The extremely rare gentian noble spirit is distilled from the root of the yellow gentian.
The price for this rarity is now over € 400/litre. The filling, the ganache, of the truffle praline contains 9% gentian brandy. Sweet chocolate and the bitter aroma of the root of the yellow gentian create an
overwhelming taste experience. Finest noble brandy from the Austrian Alps and refined with finesse
to a culinary pleasure, this 100% natural product provides the basis for our truffle confectionery,
each of which is made individually in a small manufactory and by hand.

Bitter aromas are found especially in high-quality gentian brandies. For example, the amarogentin of the gentian root is the most bitter, natural substance found in nature. Truly a "royal" achievement.

Fresh roots of the yellow gentian are pricked to obtain the gentian noble spirit. Gentian is primarily found in the Alps, the French Massif Central and the Pyrenees.
What are the ideal storage and consumption temperatures for the gentian truffle confection?
You will experience the best enjoyment if the Gentian Truffle Confectionery is stored at 16°C to 18°C and eaten at room temperature around 20°C to 22°C.
